Warming Chai tea
Makes 2-3 servings
4 cups of water
2 cinnamon sticks
5 cloves
10 cardamom pods
10 peppercorns
1 anise pod
1 tbsp dried ginger root
2-3 tsp or teabags of black, green, or rooibos tea
Honey and milk, to taste
Place the 4 cups of water in a pot and add all the herbs and spices. Cover and bring to a simmer and allow to simmer on low for 45 minutes. If water levels are low, add extra. Strain tea and add your milk and honey to taste. Enjoy!
For a little extra flavor and kick, “activate” your spices by toasting everything but the ginger (and tea) before adding the water. Just put the whole spices on the bottom of your pot and turn on medium heat until you can clearly smell them. Be careful not to burn!
