POTATO GNOCCHI

Ingredients:

  • 3-4 large potatoes

  • 1.5 cups flour

  • 1 egg

  • Salt & pepper

Instructions:

  • Boil potatoes

  • Once the potatoes are cooled, mash them until lumps are gone and mix in salt and pepper

  • Make a well in the center of mashed potatoes and crack the egg inside

  • Incorporate mashed potatoes into egg by gradually folding mixture until dough forms

  • Add flour a little bit at a time while continuing the folding motion

  • One fully incorporated, shape the gnocchi - this can be done by rolling long tubes and cutting slices off or by shaping pieces by hand

  • Once gnocchi is formed, boil in salted water until they rise to the top

  • Cover with pesto or tomato sauce and enjoy!

  • Using leftover mashed potatoes is a great way to reduce waste and create new with excess

  • Season to your hearts desire! Try adding thyme, rosemary, or sage
