Kale salad

Ingredients:

  • 2 bunches of kale

  • 1 diced apple

  • 1/2 purple onion, minced

  • 1 cup feta cheese crumbles (optional)

  • 1 cup sunflower or pumpkin seeds

  • 1 cup currants or raisins

  • 1 teaspoon salt

  • 1 dash of pepper

  • 1/2 cup olive oil

  • 1/4 cup apple cider vinegar

Directions:

  1. Wash, dry and de-stem the kale

  2. Cut kale into strips

  3. Using your hands, work the teaspoon of salt into the kale for about 2 minutes

  4. wish the oil and vinegar together and then pour over greens. Taste them, once dressed, to see if they need more salt.

  5. Add remaining ingredients and let sit for about 15 min before eating.
